The Intention

Known for its many anti-inflammatory phytochemicals, Kale is a highly nutritious vegetable with an abundance of vitamin K that helps regulate the body's inflammatory process, as well as vitamin C, beta-carotene, and manganese that are vital for skin health. However, kale also contains goitrogens, which inhibit thyroid function, but are mostly removed with cooking. Dr. Cowan's Garden steams their kale before dehydration to remove these goitrogens and allow for the most bioavailable nutrients to remain intact. 

Dr. Cowan's Garden powders allow for the assimilation of an abundance of plant diversity to be easily and deliciously incorporated into our everyday lives. More than 4 pounds of kale are contained in this jar, with a variety of Red Russian, Scarlet, Lacinato, Dwarf Siberian, and Toscano kale. The flavor is bright and grassy, and takes on the flavor of the foods into which it is folded (which makes it ideal of picky vegetable eaters!). Delicious sprinkled on salads, eggs, rice, quinoa, buttered popcorn, steamed or roasted vegetables, fish, or chicken. Add to smoothies, soups, stews, pasta, spaghetti sauce - really, anything you enjoy eating!

The Dr. Cowan's Garden Story

Originating as an idea at a family vacation in Cape Cod in July 2015, Dr. Cowan’s Garden is a true family-owned-and-run business. With over 40 years of studying food and nutrition and working with patients, Dr. Tom Cowan is a longtime holistic physician living and practicing in San Francisco who specializes in helping people heal through diet and natural medicines. His book How (and Why) to Eat More Vegetables describes why eating small amounts of a wide variety of vegetables is key to optimal health, and he is a passionate and knowledgeable grower of vegetables. He does, indeed, plant and tend many of the vegetables that are turned into these powders. Dr. Cowan believes that, taking our lead from healthy traditional peoples, we should strive to eat at least 10 to 12 different plants a day to avail ourselves of all the concentrated vitamins, minerals, and phytochemicals that plants have to offer – and Dr. Cowan’s Garden powders help us achieve this plant diversity with ease and accessibility on a daily basis.

Sourcing vegetables from their own organic garden, as well as directly from organic and biodynamic farmers in New York, Pennsylvania, and California, Dr. Cowan’s Garden powders are as nutrient-dense as they are efficacious. All vegetables are gently and intentionally dehydrated (some steamed beforehand) before being turned into powdered form; and all powders are created in-house in Dr. Cowan’s Garden California studio.
