Food as Medicine: Banana Reishi Collagen Muffins

Our all-time favorite muffins, these delicious, nutrient-abundant delights coalesce beloved Honor Earth pantry essentials (like collagen, vanilla, ghee, and reishi)with bananas, flour, and eggs to bring to life super-easy-to-make, scrumptious muffins that the entire family will love. Trust us when we say you’re going to want to save this recipe to return to it time and time again. It’s a go-to!

Ingredients:
• 3 very ripe bananas, mashed
• 1/2 cup maple syrup
• 1/3 cup melted ghee
• 2 tsp vanilla powder
• 2 large eggs
• 1.5 cups flour of choice (we love Bluebird Grain Farms Spelt for this recipe)
• 4 TBS collagen
• 3 tsp reishi
• 1/2 tsp cinnamon
• 1 tsp baking soda
• 1/2 tsp salt

Directions:
1. Preheat oven to 350ºF.

2. Mix the bananas, maple syrup, eggs, and ghee. Add the vanilla, collagen, reishi, baking soda, flour, cinnamon, and salt. Mix well to combine.

2. Transfer to lined muffin tin. Bake at 350ºF for about 25 minutes. Allow to cool 10-20 minutes. Enjoy!
