The perfect topping for yogurt, a delightful companion to milk, or a treat all on its own, this irresistible and incredibly easy-to-make granola is the very best. A major plus? It's also packed with antioxidants, B vitamins, and magnesium. Delicious and nutritious: yes, please. And, to top it all off, it's super family-friendly and beloved by kiddos - our founder Sara's daughters request to always have a batch on hand.
Bonus tip: package a cup or two of this homemade granola in a mason jar, adorn it with some twine, a name tag, and maybe even some pressed flowers, and you've just created a heartwarming gift to bestow upon a loved one.
Ingredients:
- 4 cups rolled oats (we love One Degree Organic Foods Sprouted Rolled Oats)
- 2 cups raw nuts and seeds (we love a combo of pumpkin seeds, almonds, and walnuts)
- 1 teaspoon salt
- 1.5 teaspoons vanilla powder
- 1/2 teaspoon cinnamon
- 1/4 cup coconut flakes
- 1/2 cup olive oil
- 1/2 cup maple syrup
- 1 cup dried fruit (we love dried cherries, but cranberries work great too)
Directions:
- Preheat oven to 350*F and line a large baking sheet with parchment paper. Set aside.
- In a large mixing bowl, combine the oats, nuts, seeds, salt, vanilla, cinnamon, and coconut flakes. Stir to combine.
- Create a well in the center of the dry mixture and slowly pour in olive oil and maple syrup. Mix well until everything is lightly coated.
- Pour the granola onto your parchment-lined baking sheet and spread it into an even layer.
- Bake until lightly golden, between 25-35 minutes depending on oven, stirring halfway through. The granola continues to get even crispier as it cools.
- Remove from oven and allow to completely cool (about 45 mins - 1 hour).
- Top with dried fruit.
- Store the granola in an airtight container at room temp for 1-2 weeks or in the freezer for up to 3 months.
